Ingredients:

  • 1 tbsp olive oil
  • 1 egg, at room temperature
  • 1 wholemeal pitta
  • ½ avocado, peeled and finely sliced
  • 25g white Cheddar, grated
  • a small handful of baby spinach

Method:

  1. Heat the oil in a small frying pan over a low-medium heat.
  2. Break the egg into a saucer and then gently slide it into the pan.
  3. Gently cook the egg for about 5 minutes, until the white is set but the yolk is still runny.
  4. Meanwhile, toast the pitta on both sides.
  5. Split open and stuff with the avocado, Cheddar and spinach.
  6. Top with the fried egg and serve without delay.
