Stir-fried Vegetables

Prep Time 5 minutes Cook Time: 7 minutes Serves: 2 Ingredients:

  • 1 carrot, peeled and finely slices
  • A handful of baby corn, sliced lengthways
  • A handful of broccoli florets
  • A handful of sugar snap peas
  • A handful of shredded white cabbage
  • 1 Tbsp coconut oil or sesame oil
  • 2 Tbsp soy sauce

Method:  

  1. Heat the oil in a large wok over a medium- high heat.
  2. Add the vegetables and stir fry for about 5 minutes, add a splash of water if your wok becomes dry.
  3. Add the soy sauce and stir fry for 2 minutes or until the vegetables are cooked.
  4. I like to sprinkle some sesame seeds over my stir fried vegetables for an extra bit if crunch. Alternate option: add some garlic, ginger or chilli if you prefer to soy sauce.
