
Coconut & Spinach Soup
Feb 04, 2025- This recipe is so worth making. It’s one of the tastiest soups you will make and is packed full of goodness.
- Super handy to freeze in portions and use it during the week.
- Spinach gives you a great iron boost.
Prep Time: 10 minutes Cook Time: 25 minutes
Ingredients:
- 1 onion, finely chopped
- 2 cloves of garlic, crushed
- 1 tbsp. ground cumin
- 1 tbsp. ground coriander
- 1 tin coconut milk
- 500 mills vegetable stock
- 150 grams spinach leaves, roughly chopped
Method:
- Melt the coconut oil in a medium pot over medium heat.
- As the onion garlic and spices, sauté for 5 minutes stirring frequently.
- Pour in the coconut milk and stock.
- Simmer gently for 20 minutes. Add the spinach and cook for 3 minutes.
- Using a hand blender liquidize the ingredients.
- Serve immediately with crusty sourdough bread.
