Coconut & Spinach Soup

  • Super handy to freeze in portions and use it during the week.
  • Spinach gives you a great iron boost.

Prep Time: 10 minutes Cook Time: 25 minutes

Ingredients:

  • 1 onion, finely chopped
  • 2 cloves of garlic, crushed
  • 1 tbsp. ground cumin
  • 1 tbsp. ground coriander
  • 1 tin coconut milk
  • 500 mills vegetable stock
  • 150 grams spinach leaves, roughly chopped

Method:  

  1. Melt the coconut oil in a medium pot over medium heat.
  2. As the onion garlic and spices, sauté for 5 minutes stirring frequently.
  3. Pour in the coconut milk and stock.
  4. Simmer gently for 20 minutes. Add the spinach and cook for 3 minutes.
  5. Using a hand blender liquidize the ingredients.
  6. Serve immediately with crusty sourdough bread.
