Chilli & Prawn Bruschetta

Prep Time: 5 minutes Cook Time: 15 minutes Serves: 4, as a starter size portion

Ingredients:

  • 2tbs olive oil
  • 4 cloves garlic, grated
  • Day old bread sliced, ciabatta/baguette works best
  • 1 tbs real butter
  • 400g tiger prawns, shelled & deveined
  • 1tbs homemade sweet chilli sauce, see recipe under Dips (or use favourite shop-bought chilli sauce to buy yourself time)
  • 1 punnet cherry tomatoes, roughly chopped
  • Handful of pitted black olives, sliced
  • Handful fresh basil, roughly chopped
  • Salt & pepper, to taste
  • Juice of ½ a lemon

Method:

  1. Preheat your oven to 180C.
  2. Place the bread on a tray line with parchment paper.
  3. Mix the olive oil and grated garlic together, then brush generously over the bread.
  4. Place the tray in oven for 5 minutes then set aside.
  5. In a frying pan, heat the butter over a low heat and add your prawns.
  6. Gently fry the prawns until they start to change colour slightly then pour over the sweet chilli sauce and remove from the heat.
  7. Combine the rest of the ingredients in a bowl and season to taste.
  8. Pile the bread half and half with the prawns and the salsa and return to the oven for a further five minutes.
  9. Serve immediately and enjoy.
